Classic American Shrimp and Grits

Ingredients:

  • 1 cup Grits
  • 4 cups Water
  • to taste Salt
  • 1 cup Cheddar cheese
  • 4 tablespoons Butter
  • 1 pound Raw shrimp, peeled and deveined
  • 2 cloves Garlic, minced
  • 1 teaspoon Paprika
  • 1 Lemon
  • 2 tablespoons Parsley, chopped

Instructions:

  1. In a medium saucepan, bring the water and salt to a boil. Slowly stir in the grits and reduce the heat to low, cover, and cook for about 20 minutes until thickened.
  2. Stir in the cheddar cheese and 2 tablespoons of butter until melted and combined. Keep the grits warm on low heat.
  3. In a large skillet over medium heat, melt the remaining butter. Add the garlic and shrimp then sprinkle with paprika. Cook the shrimp until they turn pink, about 3 to 4 minutes per side.
  4. Squeeze the lemon over the cooked shrimp and sprinkle with chopped parsley.
  5. Serve the shrimp over a bed of cheesy grits with the sauce from the skillet poured on top.
