Classic American Pulled Pork Sandwich

Ingredients:
- 2 lbs boneless pork shoulder
- to taste salt
- to taste black pepper
- 1.5 cups BBQ sauce
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 4 sandwich buns
- 1 cup coleslaw
Instructions:
- Preheat oven to 300 degrees F (150 degrees C).
- Rub the pork shoulder with salt and black pepper.
- Place pork shoulder in a roasting pan, fat side up. Pour BBQ sauce over the pork, along with the chopped onion and minced garlic.
- Cover the pan with aluminum foil and bake for 3 hours, or until pork is tender enough to be easily shredded with a fork.
- Remove the pork from the oven and let rest for 15-20 minutes.
- While the pork is resting, toast the sandwich buns.
- Shred the pork, discarding any large pieces of fat. Toss the shredded pork in the cooking juices.
- To serve, fill each bun with shredded pork, drizzle with more BBQ sauce if desired, and top with coleslaw.
