Classic American Chicken Pot Pie

Ingredients:
- 2 pieces Chicken breasts
- 1 piece Onion
- 2 pieces Carrots
- 2 stalks Celery
- 2 pieces Potatoes
- 0.5 cup Peas
- 1.5 cups All-purpose flour
- 0.5 cup Unsalted butter
- 2 cups Chicken broth
- 0.5 cup Milk
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
- 2 pieces Pie crust
Instructions:
- Preheat the oven to 375 degrees F.
- In a large skillet, melt the butter over medium heat. Add the onion, carrots, and celery, cooking until the vegetables are soft.
- Add the chicken breasts to the skillet, cooking until no longer pink in the middle.
- Stir in the flour until it coats the chicken and vegetables.
- Slowly add the chicken broth and milk, stirring continuously. Bring the mixture to a simmer, and let it cook until thickened.
- Add the peas and potatoes, then season with salt and black pepper.
- Place one pie crust in a pie dish. Pour the chicken-vegetable mixture into the crust.
- Top with the second crust, crimping the edges to seal it shut. Make several small slits in the top crust to allow steam to escape.
- Bake for approximately 1 hour, or until the crust is golden brown and the filling is bubbly.
