Classic American Chicken Pot Pie

Ingredients:

  • 2 pieces Chicken breasts
  • 1 piece Onion
  • 2 pieces Carrots
  • 2 stalks Celery
  • 2 pieces Potatoes
  • 0.5 cup Peas
  • 1.5 cups All-purpose flour
  • 0.5 cup Unsalted butter
  • 2 cups Chicken broth
  • 0.5 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 pieces Pie crust

Instructions:

  1. Preheat the oven to 375 degrees F.
  2. In a large skillet, melt the butter over medium heat. Add the onion, carrots, and celery, cooking until the vegetables are soft.
  3. Add the chicken breasts to the skillet, cooking until no longer pink in the middle.
  4. Stir in the flour until it coats the chicken and vegetables.
  5. Slowly add the chicken broth and milk, stirring continuously. Bring the mixture to a simmer, and let it cook until thickened.
  6. Add the peas and potatoes, then season with salt and black pepper.
  7. Place one pie crust in a pie dish. Pour the chicken-vegetable mixture into the crust.
  8. Top with the second crust, crimping the edges to seal it shut. Make several small slits in the top crust to allow steam to escape.
  9. Bake for approximately 1 hour, or until the crust is golden brown and the filling is bubbly.
