Classic American Beef Hash

Ingredients:

  • 2 cups Beef roast, cooked and diced
  • 2 large Russet potatoes, diced
  • 1 medium Yellow onion, diced
  • 1 medium Green bell pepper, diced
  • 2 Garlic cloves, minced
  • 1 cup Beef broth
  • 2 tablespoons Olive oil
  • to taste Salt and ground black pepper
  • 2 tablespoons Fresh parsley, chopped

Instructions:

  1. 1. Heat olive oil over medium heat in a large skillet.
  2. 2. Add the onions and bell pepper to the skillet. Cook for 5 minutes until they begin to soften.
  3. 3. Add the garlic and cook for another minute.
  4. 4. Stir in the diced potatoes. Cover the skillet and cook for 10 minutes, stirring occasionally, until the potatoes are nearly cooked through.
  5. 5. Add the diced beef and beef broth to the skillet. Stir to combine, cover, and cook for another 10 minutes until the beef is heated through and the potatoes are fully cooked.
  6. 6. Season with salt and black pepper to taste. Sprinkle with chopped parsley before serving.
