Chinesen Healthy Veggie Stir-fry

Ingredients:

  • 2 tablespoons Olive Oil
  • 2 pieces Garlic cloves
  • 1 medium-sized Red Bell Pepper
  • 1 medium-sized Carrot
  • 1 cup Broccoli
  • 3 tablespoons Soy Sauce
  • 1 tablespoon Sriracha
  • 1 pinch Salt
  • 2 cups, cooked Brown rice

Instructions:

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the garlic, and sauté until fragrant and golden brown.
  3. Add the red bell pepper, carrot, and broccoli to the pan. Sauté for about 5 minutes, or until the veggies are tender.
  4. Drizzle the soy sauce and Sriracha over the vegetables, then stir to combine. Add the salt, and stir again.
  5. Serve the stir-fry over a bed of brown rice.
  6. Enjoy your healthy, midnight Chinese veggie stir-fry!
