
Chinese Vegetable Stir-Fry

Ingredients:
- 1 cup broccoli
- 1 cup carrots
- 1 piece red bell pepper
- 1 piece green bell pepper
- 1 cup shiitake mushrooms
- 2 cloves garlic
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
Instructions:
- Cut the broccoli, carrots, and bell peppers into bite-sized pieces. Slice the shiitake mushrooms thinly.
- Mince the garlic cloves.
- In a small bowl, combine the soy sauce, sesame oil, and cornstarch. Stir to combine until the cornstarch is fully dissolved.
- Heat the vegetable oil in a large wok over medium-high heat. Add the minced garlic and stir-fry for 30 seconds, until the garlic is fragrant.
- Add the vegetables to the wok. Stir-fry for 5-7 minutes, until the vegetables are tender.
- Pour the soy sauce mixture over the vegetables. Stir-fry for another 2-3 minutes, until the sauce has thickened and is evenly distributed over the vegetables.
- Serve the vegetable stir-fry hot, over rice if desired.
