Chinese Vegetable Stir-Fry

Ingredients:

  • 1 cup broccoli
  • 1 cup carrots
  • 1 piece red bell pepper
  • 1 piece green bell pepper
  • 1 cup shiitake mushrooms
  • 2 cloves garlic
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoons vegetable oil

Instructions:

  1. Cut the broccoli, carrots, and bell peppers into bite-sized pieces. Slice the shiitake mushrooms thinly.
  2. Mince the garlic cloves.
  3. In a small bowl, combine the soy sauce, sesame oil, and cornstarch. Stir to combine until the cornstarch is fully dissolved.
  4. Heat the vegetable oil in a large wok over medium-high heat. Add the minced garlic and stir-fry for 30 seconds, until the garlic is fragrant.
  5. Add the vegetables to the wok. Stir-fry for 5-7 minutes, until the vegetables are tender.
  6. Pour the soy sauce mixture over the vegetables. Stir-fry for another 2-3 minutes, until the sauce has thickened and is evenly distributed over the vegetables.
  7. Serve the vegetable stir-fry hot, over rice if desired.
