Chinese Style Vegetable Lo Mein

Ingredients:

  • 8 ounces Dried Lo Mein Noodles
  • 3 tablespoons Low-sodium Soy Sauce
  • 2 tablespoons Oyster Sauce
  • 2 teaspoons Sugar
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Vegetable Oil
  • 3 cloves Garlic
  • 1 medium White Onion
  • 1 medium Carrot
  • 1 large Bell Pepper
  • 3 stalks Scallions

Instructions:

  1. In a large pot of boiling water, cook the lo mein noodles until tender, about 5 minutes. Drain and set aside.
  2. In a small bowl, whisk together the soy sauce, oyster sauce, sugar, and sesame oil. Set aside.
  3. Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the garlic and onion and cook until fragrant, about 2 minutes.
  4. Add the carrot and bell pepper and cook until they begin to soften, about 5 minutes. Add the scallions and cook for an additional minute.
  5. Add the cooked noodles and sauce to the wok and toss to combine. Cook until heated through, about 2 minutes more.
  6. Serve the lo mein hot, garnish with additional sliced scallions if desired.
