Chinese-Style Healthy Egg Stir-fry

Ingredients:

  • 6 unit Eggs
  • 1 tablespoon Olive oil
  • 2 unit Garlic cloves
  • 1 unit Red bell pepper
  • 3 unit Scallions
  • 2 tablespoon Low sodium soy sauce
  • 1 teaspoon Sesame oil
  • to taste Crushed red pepper flakes

Instructions:

  1. In a bowl, beat the eggs and set aside.
  2. Slice the red bell pepper and scallions. Mince the garlic.
  3. In a non-stick pan, heat the olive oil over medium heat.
  4. Sauté the minced garlic until aromatic. Add the sliced bell pepper and cook until tender.
  5. Reduce heat to low and pour in the beaten eggs. Let it set for a minute then gently stir for a soft scramble.
  6. Add the scallions, low sodium soy sauce, and sesame oil. Stir to combine.
  7. Sprinkle with crushed red pepper flakes to taste, if desired.
  8. Serve hot as a appetizing and healthy snack.
