
Chinese-Style Healthy Egg Stir-fry

Ingredients:
- 6 unit Eggs
- 1 tablespoon Olive oil
- 2 unit Garlic cloves
- 1 unit Red bell pepper
- 3 unit Scallions
- 2 tablespoon Low sodium soy sauce
- 1 teaspoon Sesame oil
- to taste Crushed red pepper flakes
Instructions:
- In a bowl, beat the eggs and set aside.
- Slice the red bell pepper and scallions. Mince the garlic.
- In a non-stick pan, heat the olive oil over medium heat.
- Sauté the minced garlic until aromatic. Add the sliced bell pepper and cook until tender.
- Reduce heat to low and pour in the beaten eggs. Let it set for a minute then gently stir for a soft scramble.
- Add the scallions, low sodium soy sauce, and sesame oil. Stir to combine.
- Sprinkle with crushed red pepper flakes to taste, if desired.
- Serve hot as a appetizing and healthy snack.
