Chinese Style Comfort Rice Bowl

Ingredients:

  • 2 tablespoons Cooking oil
  • 4 cloves Garlic
  • 1 medium White onion
  • 2 heads Bok choy
  • 3 tablespoons Soy sauce
  • 2 cups Cooked jasmine rice
  • 1 cup Chicken stock
  • 2 Eggs

Instructions:

  1. Heat the cooking oil in a large skillet over medium heat.
  2. Add the garlic and white onion to the skillet, sautéing them until they become translucent.
  3. Then, add the bok choy to the skillet and cook it until it wilts. Stir in the soy sauce to season.
  4. Add the cooked jasmine rice to the skillet and stir it into the mixture, allowing it to absorb the flavors from the rest of the ingredients.
  5. Pour the chicken stock over the top of the rice, then lower the heat to a simmer and cover the skillet. Allow it to cook for about 10 minutes.
  6. Meanwhile, fry the eggs in a separate pan to your preferred level of doneness.
  7. When ready to serve, top each serving of the rice mixture with a fried egg.
