Chinese Style Comfort Rice Balls

Ingredients:

  • 2 cups Short grain rice
  • 2 cups Water
  • 200 grams Ground pork
  • 2 tablespoons Soy sauce
  • 3 stalks Scallions
  • 1 teaspoon Ginger
  • 1 teaspoon Sesame oil
  • to taste Salt
  • to taste White pepper

Instructions:

  1. Rinse the rice under cold water until the water runs clear. This removes excess starch and helps the rice balls to not stick.
  2. Cook the rice according to the rice cooker instructions or on the stovetop. Let it cool to handle.
  3. In a bowl, mix the ground pork with ginger, half of the scallions chopped, soy sauce, sesame oil, salt, and white pepper.
  4. Take a portion of cooled rice and flatten it in your hand. Add a small spoonful of the pork mixture in the middle and roll it into a ball. Repeat until all rice and pork has been used.
  5. Heat a pan with oil and fry each rice ball until golden brown and cooked through.
  6. Serve hot with the remaining chopped scallions sprinkled on top.
