Chinese-Style Breakfast Fish Congee

Ingredients:

  • 2 pieces White fish fillets (Cod or Tilapia would work)
  • 1/2 cup Jasmine rice
  • 6 cups Water
  • 1 inch Ginger
  • 2 stalks Scallions
  • 1/2 teaspoon Salt
  • 1/4 teaspoon White pepper

Instructions:

  1. Clean the fish fillets and cut them into 1.5" slices.
  2. Peel and slice the ginger.
  3. Slice the scallions, separating the white and green parts.
  4. Rinse the jasmine rice until the water runs clear.
  5. In a large pot, bring the water to a boil. Add the ginger, white part of the scallions, and the rice. Reduce the heat to low and let it simmer.
  6. Stir the congee occasionally to prevent the rice from sticking to the bottom. Cook for about 1 hour, until the rice has broken down and the congee has thickened.
  7. Season the fish slices with salt and white pepper, then add them to the congee. Let it simmer for another 5-7 minutes until the fish is fully cooked.
  8. Serve the congee in bowls, garnished with the green part of the scallions. Adjust seasoning if necessary. Enjoy this comforting Chinese-style breakfast fish congee.
