Chinese-Style Breakfast Fish Congee

Ingredients:
- 2 pieces White fish fillets (Cod or Tilapia would work)
- 1/2 cup Jasmine rice
- 6 cups Water
- 1 inch Ginger
- 2 stalks Scallions
- 1/2 teaspoon Salt
- 1/4 teaspoon White pepper
Instructions:
- Clean the fish fillets and cut them into 1.5" slices.
- Peel and slice the ginger.
- Slice the scallions, separating the white and green parts.
- Rinse the jasmine rice until the water runs clear.
- In a large pot, bring the water to a boil. Add the ginger, white part of the scallions, and the rice. Reduce the heat to low and let it simmer.
- Stir the congee occasionally to prevent the rice from sticking to the bottom. Cook for about 1 hour, until the rice has broken down and the congee has thickened.
- Season the fish slices with salt and white pepper, then add them to the congee. Let it simmer for another 5-7 minutes until the fish is fully cooked.
- Serve the congee in bowls, garnished with the green part of the scallions. Adjust seasoning if necessary. Enjoy this comforting Chinese-style breakfast fish congee.
