
Chinese Steamed Fish

Ingredients:
- 1 Whole white fish (like sea bass, halibut, or red snapper)
- 2 inch piece Fresh ginger
- 2 stalks Scallions
- A handful Cilantro
- 3 tablespoons Light soy sauce
- 3 tablespoons Water
- 1 teaspoon Sugar
- 1 tablespoon Canola oil
Instructions:
- Clean the fish and make a few diagonal cuts on both sides of the fish.
- Finely slice the ginger. Cut the scallions into 2-inch long segments. Roughly chop the cilantro.
- Place the fish on a heatproof plate, and place ginger slices on top.
- Steam the fish in a steamer for about 10 minutes, or until the fish is fully cooked.
- In the meantime, combine the soy sauce, water, and sugar in a small saucepan, and heat until the sugar is completely dissolved.
- Heat the canola oil in a skillet. Fry the scallion segments until they start to brown.
- Once the fish is done, discard the ginger and top with the fried scallions and fresh cilantro.
- Pour the heated soy sauce mixture evenly over the fish.
- Serve the fish hot with rice on the side.
