Chinese Steamed Fish

Ingredients:

  • 1 Whole white fish (like sea bass, halibut, or red snapper)
  • 2 inch piece Fresh ginger
  • 2 stalks Scallions
  • A handful Cilantro
  • 3 tablespoons Light soy sauce
  • 3 tablespoons Water
  • 1 teaspoon Sugar
  • 1 tablespoon Canola oil

Instructions:

  1. Clean the fish and make a few diagonal cuts on both sides of the fish.
  2. Finely slice the ginger. Cut the scallions into 2-inch long segments. Roughly chop the cilantro.
  3. Place the fish on a heatproof plate, and place ginger slices on top.
  4. Steam the fish in a steamer for about 10 minutes, or until the fish is fully cooked.
  5. In the meantime, combine the soy sauce, water, and sugar in a small saucepan, and heat until the sugar is completely dissolved.
  6. Heat the canola oil in a skillet. Fry the scallion segments until they start to brown.
  7. Once the fish is done, discard the ginger and top with the fried scallions and fresh cilantro.
  8. Pour the heated soy sauce mixture evenly over the fish.
  9. Serve the fish hot with rice on the side.
