Chinese Steamed Eggs

Ingredients:

  • 4 whole Eggs
  • 1 cup Water
  • 1/2 teaspoon Salt
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • 2 tablespoons Spring onions, chopped
  • Coriander leaves, for garnishing

Instructions:

  1. Beat the eggs lightly in a bowl, do not incorporate too much air into the mixture.
  2. Add in half a cup of water and salt to the eggs, continue to beat lightly until all the salt is dissolved.
  3. Strain the egg mixture through a fine sieve into a heatproof dish.
  4. Cover the dish with aluminium foil or a lid.
  5. Place the dish into a steamer, cover with the steamer lid and steam for about 12 minutes over medium heat.
  6. After 12 minutes, remove the dish from the steamer and let it cool.
  7. In the meantime, mix the remaining half cup of water with the soy sauce and sesame oil. Heat this mixture slightly and pour it over the steamed eggs.
  8. Sprinkle chopped spring onions and garnish with coriander leaves.
  9. Serve warm as a comfort food for the perfect Chinese breakfast.
