
Chinese Steamed Eggs

Ingredients:
- 4 whole Eggs
- 1 cup Water
- 1/2 teaspoon Salt
- 1 tablespoon Soy sauce
- 1 teaspoon Sesame oil
- 2 tablespoons Spring onions, chopped
- Coriander leaves, for garnishing
Instructions:
- Beat the eggs lightly in a bowl, do not incorporate too much air into the mixture.
- Add in half a cup of water and salt to the eggs, continue to beat lightly until all the salt is dissolved.
- Strain the egg mixture through a fine sieve into a heatproof dish.
- Cover the dish with aluminium foil or a lid.
- Place the dish into a steamer, cover with the steamer lid and steam for about 12 minutes over medium heat.
- After 12 minutes, remove the dish from the steamer and let it cool.
- In the meantime, mix the remaining half cup of water with the soy sauce and sesame oil. Heat this mixture slightly and pour it over the steamed eggs.
- Sprinkle chopped spring onions and garnish with coriander leaves.
- Serve warm as a comfort food for the perfect Chinese breakfast.
