Chinese Spicy Vegetable Stir-fry

Ingredients:

  • 4 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 3 cloves garlic
  • 1 inch ginger
  • 3 tablespoons soy sauce
  • 2 teaspoons red chili flakes
  • 2 tablespoons sesame oil

Instructions:

  1. Clean and chop the mixed vegetables into bite-sized pieces.
  2. Mince the garlic and finely grate the ginger.
  3. Heat the sesame oil in a wok on medium heat. Add the garlic, ginger and chili flakes and stir-fry for 2 minutes until fragrant.
  4. Add the chopped vegetables and stir-fry for 5 minutes.
  5. Pour over the soy sauce and continue to stir-fry for another 3 minutes.
  6. Serve immediately, garnish with more chili flakes if desired.
