Chinese Spicy Five-Flavour Squid

Ingredients:

  • 4 whole Squid tubes
  • 2 pieces Star anise
  • 6 whole Dried red chilli peppers
  • 1 teaspoon Sichuan peppercorns
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 2 teaspoons Sugar
  • 3 cloves Garlic
  • 4 stalks Spring onions
  • 2 teaspoons Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Vegetable oil

Instructions:

  1. Clean the squid tubes and score the surface in a criss-cross pattern, then cut into bite-sized pieces.
  2. In a large wok or frying pan, heat the vegetable oil over medium heat. Add the star anise, dried chillies, and Sichuan peppercorns. Stir-fry until fragrant.
  3. Add the chopped garlic and stir-fry until golden.
  4. Add the squid pieces and stir-fry for 2-3 minutes, until they curl and become opaque.
  5. Add the soy sauce, rice vinegar, sugar, and chopped spring onions to the wok. Stir well to mix.
  6. In a separate bowl, mix the cornstarch with water to make a slurry. Then, slowly add this to the wok while stirring continuously until the sauce thickens.
  7. Serve the squid hot over jasmine rice, garnished with remaining spring onions. Enjoy your exotic Chinese lunch!
