
Chinese Spicy Five-Flavour Squid

Ingredients:
- 4 whole Squid tubes
- 2 pieces Star anise
- 6 whole Dried red chilli peppers
- 1 teaspoon Sichuan peppercorns
- 2 tablespoons Soy sauce
- 1 tablespoon Rice vinegar
- 2 teaspoons Sugar
- 3 cloves Garlic
- 4 stalks Spring onions
- 2 teaspoons Cornstarch
- 2 tablespoons Water
- 2 tablespoons Vegetable oil
Instructions:
- Clean the squid tubes and score the surface in a criss-cross pattern, then cut into bite-sized pieces.
- In a large wok or frying pan, heat the vegetable oil over medium heat. Add the star anise, dried chillies, and Sichuan peppercorns. Stir-fry until fragrant.
- Add the chopped garlic and stir-fry until golden.
- Add the squid pieces and stir-fry for 2-3 minutes, until they curl and become opaque.
- Add the soy sauce, rice vinegar, sugar, and chopped spring onions to the wok. Stir well to mix.
- In a separate bowl, mix the cornstarch with water to make a slurry. Then, slowly add this to the wok while stirring continuously until the sauce thickens.
- Serve the squid hot over jasmine rice, garnished with remaining spring onions. Enjoy your exotic Chinese lunch!
