Chinese Seafood Congee

Ingredients:

  • 1 cup Jasmine rice
  • 8 cups Water
  • 1 pound Boneless white fish fillets
  • 12 pieces Fresh shrimp
  • 2 slices Ginger
  • 1 teaspoon Salt
  • 1 teaspoon White pepper
  • 2 tablespoons, chopped Green onions
  • 2 tablespoons, chopped Fresh coriander leaves

Instructions:

  1. 1. Rinse the Jasmine rice under cold water until the water runs clear. This will remove any extra starch.
  2. 2. In a large pot, add the rinsed rice and 8 cups of water. Bring to a boil.
  3. 3. Once boiling, lower the heat, add the ginger and salt, and let it simmer for about 1 hour, or until the rice breaks down and becomes a creamy texture.
  4. 4. Cut the fish into bite-sized pieces and peel the shrimp. Add to the simmering congee and cook until they are done, about 10-15 minutes.
  5. 5. Season with white pepper.
  6. 6. Serve hot, garnished with chopped green onions and coriander leaves.
