Chinese Seafood Congee

Ingredients:
- 1 cup Jasmine rice
- 8 cups Water
- 1 pound Boneless white fish fillets
- 12 pieces Fresh shrimp
- 2 slices Ginger
- 1 teaspoon Salt
- 1 teaspoon White pepper
- 2 tablespoons, chopped Green onions
- 2 tablespoons, chopped Fresh coriander leaves
Instructions:
- 1. Rinse the Jasmine rice under cold water until the water runs clear. This will remove any extra starch.
- 2. In a large pot, add the rinsed rice and 8 cups of water. Bring to a boil.
- 3. Once boiling, lower the heat, add the ginger and salt, and let it simmer for about 1 hour, or until the rice breaks down and becomes a creamy texture.
- 4. Cut the fish into bite-sized pieces and peel the shrimp. Add to the simmering congee and cook until they are done, about 10-15 minutes.
- 5. Season with white pepper.
- 6. Serve hot, garnished with chopped green onions and coriander leaves.
