Chinese Scrambled Eggs

Ingredients:

  • 4 pcs Eggs
  • 2 stalks Green onions
  • 2 tbsp Soy sauce
  • 1 tsp Sesame oil
  • to taste Salt
  • to taste Black pepper
  • 1 tbsp Cooking oil

Instructions:

  1. Chop the green onions into thin slices.
  2. Crack eggs into a bowl, add salt, pepper, soy sauce and sesame oil, and then beat until well combined.
  3. Heat cooking oil in a pan over medium heat.
  4. Pour the beaten eggs into the pan. Cook without stirring until they start to set around the edges.
  5. Stir the eggs gently with a spatula, pulling them from the edge towards the center.
  6. Continue cooking and stirring until the eggs are mostly cooked but still slightly runny. This should take about 2 to 3 minutes.
  7. Add the chopped green onions and stir through the eggs till well combined. Remove from heat and let the residual heat finish cooking the eggs.
  8. Serve the scrambled eggs immediately while hot.
