
Chinese Scallion Pancake

Ingredients:
- 2 cups All-purpose flour
- 1 cup Hot water
- 1 bunch Scallions
- 1 teaspoon Salt
- 50 ml Vegetable oil
Instructions:
- In a large bowl, mix flour with salt. Stir in the hot water until a dough forms. Let it rest for about 10 minutes.
- Chop the scallions finely.
- Divide the dough into four equal portions. Roll each into a ball, then flatten using a rolling pin into a pancake shape.
- Brush the pancake with oil and sprinkle the chopped scallions over it. Roll the pancake into a log, then curl it into a snail shape.
- Using the rolling pin, flatten the snail-shaped dough again into a pancake. Repeat the process with the remaining dough and scallions.
- Heat the oil in a pan over medium heat. Fry each pancake for about 2-3 minutes on each side, or until golden brown.
- Slice the scallion pancakes into quarters and serve immediately for a delicious and authentic Chinese breakfast!
