
Chinese Midnight Pork Stir-fry

Ingredients:
- 1/2 pound Pork tenderloin
- 2 tablespoons Vegetable oil
- 2 cloves Garlic
- 1 inch piece Ginger
- 2 tablespoons Soy sauce
- 1 tablespoon Oyster sauce
- 1 tablespoon Dry sherry
- 2 stalks Spring onions
- 1 medium Red bell pepper
- To Taste Salt
- To Taste Pepper
Instructions:
- Cut the pork into thin strips and season with salt and pepper.
- Heat the oil in a pan over medium-high heat. Add the pork and stir-fry until browned and cooked through. Remove from the pan and set aside.
- In the same pan, add the garlic and ginger. Stir-fry until fragrant.
- Add the bell pepper and stir-fry until softened.
- Return the pork to the pan. Add the soy sauce, oyster sauce, and sherry. Stir-fry for a few more minutes until everything is well coated in the sauce.
- Garnish with chopped spring onions before serving.
