Chinese Midnight Pork Stir-fry

Ingredients:

  • 1/2 pound Pork tenderloin
  • 2 tablespoons Vegetable oil
  • 2 cloves Garlic
  • 1 inch piece Ginger
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Dry sherry
  • 2 stalks Spring onions
  • 1 medium Red bell pepper
  • To Taste Salt
  • To Taste Pepper

Instructions:

  1. Cut the pork into thin strips and season with salt and pepper.
  2. Heat the oil in a pan over medium-high heat. Add the pork and stir-fry until browned and cooked through. Remove from the pan and set aside.
  3. In the same pan, add the garlic and ginger. Stir-fry until fragrant.
  4. Add the bell pepper and stir-fry until softened.
  5. Return the pork to the pan. Add the soy sauce, oyster sauce, and sherry. Stir-fry for a few more minutes until everything is well coated in the sauce.
  6. Garnish with chopped spring onions before serving.
