Chinese Midnight Fried Rice

Ingredients:

  • 2 cups Cooked Rice
  • 1 cup Thinly Sliced Chicken Breasts
  • 2 tablespoons Vegetable Oil
  • 0.5 cup Finely Diced Onion
  • 0.5 cup Chopped Carrots
  • 2 tablespoons Chopped Scallions
  • 1 teaspoon Minced Garlic
  • 0.5 cup Frozen Peas
  • 2 tablespoons Soy Sauce
  • 2 large Beaten Eggs
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Heat 1 tablespoon of oil in a large skillet over medium heat. Add chicken and season with salt and pepper. Cook until no longer pink. Set aside.
  2. In the empty skillet, add another tablespoon of oil. Add onions, carrots, scallions and garlic. Stir fry until tender.
  3. Move veggies to one side, and pour beaten eggs on the other side. Stir fry until scrambled, then mix in with veggies.
  4. Stir in peas, chicken, and rice. Pour soy sauce over top, stir, and cook about 2 minutes until heated through.
