
Chinese Midnight Fried Rice

Ingredients:
- 2 cups Cooked Rice
- 1 cup Thinly Sliced Chicken Breasts
- 2 tablespoons Vegetable Oil
- 0.5 cup Finely Diced Onion
- 0.5 cup Chopped Carrots
- 2 tablespoons Chopped Scallions
- 1 teaspoon Minced Garlic
- 0.5 cup Frozen Peas
- 2 tablespoons Soy Sauce
- 2 large Beaten Eggs
- to taste Salt
- to taste Pepper
Instructions:
- Heat 1 tablespoon of oil in a large skillet over medium heat. Add chicken and season with salt and pepper. Cook until no longer pink. Set aside.
- In the empty skillet, add another tablespoon of oil. Add onions, carrots, scallions and garlic. Stir fry until tender.
- Move veggies to one side, and pour beaten eggs on the other side. Stir fry until scrambled, then mix in with veggies.
- Stir in peas, chicken, and rice. Pour soy sauce over top, stir, and cook about 2 minutes until heated through.
