Chinese Healthy Scrambled Eggs

Ingredients:

  • 4 whole Eggs
  • 2 stalks Scallions
  • 2 medium size Tomatoes
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Sesame Oil
  • a pinch Salt
  • a pinch Pepper

Instructions:

  1. 1. Crack the eggs into a bowl and whisk until the yolks and whites are fully mixed.
  2. 2. Slice the scallions and tomatoes into small pieces.
  3. 3. Heat a bit of sesame oil in a non-stick frying pan over medium heat.
  4. 4. Add the chopped scallions to the pan and stir until they get a bit soft.
  5. 5. Add in chopped tomatoes and cook until they become soft and a bit juicy.
  6. 6. Pour in the whisked eggs, add soy sauce, salt, and pepper. Stir continuously until the eggs are fully cooked.
  7. 7. Serve hot, garnish with some additional scallions if desired.
