
Chinese Healthy Scrambled Eggs

Ingredients:
- 4 whole Eggs
- 2 stalks Scallions
- 2 medium size Tomatoes
- 1 tablespoon Soy Sauce
- 1 teaspoon Sesame Oil
- a pinch Salt
- a pinch Pepper
Instructions:
- 1. Crack the eggs into a bowl and whisk until the yolks and whites are fully mixed.
- 2. Slice the scallions and tomatoes into small pieces.
- 3. Heat a bit of sesame oil in a non-stick frying pan over medium heat.
- 4. Add the chopped scallions to the pan and stir until they get a bit soft.
- 5. Add in chopped tomatoes and cook until they become soft and a bit juicy.
- 6. Pour in the whisked eggs, add soy sauce, salt, and pepper. Stir continuously until the eggs are fully cooked.
- 7. Serve hot, garnish with some additional scallions if desired.
