
Chinese Fruit Stir-fry

Ingredients:
- 1 whole Pineapple
- 1 whole Red Bell Pepper
- 1 whole Green Bell Pepper
- 1 whole Red Onion
- 1 whole Mango
- 200 grams Tofu
- 2 tablespoons Soy Sauce
- 2 cloves Garlic
- 1 inch Ginger
- 2 tablespoons Olive Oil
Instructions:
- 1. Cut all the fruits and vegetables into small pieces.
- 2. Mince the garlic and ginger.
- 3. Heat a pan over medium heat, add the olive oil.
- 4. Add the minced garlic and ginger to the pan and stir for a minute.
- 5. Add the tofu, stir and cook until it is golden brown.
- 6. Add the pineapple, peppers, onion, and mango to the pan and stir-fry for 5-10 minutes until the vegetables are tender and the fruits are heated through. Add a little water if needed.
- 7. Drizzle the soy sauce over the stir-fry, mix well and cook for another 2 minutes.
- 8. Remove from heat and serve hot.
