Chinese Fruit Stir-fry

Ingredients:

  • 1 whole Pineapple
  • 1 whole Red Bell Pepper
  • 1 whole Green Bell Pepper
  • 1 whole Red Onion
  • 1 whole Mango
  • 200 grams Tofu
  • 2 tablespoons Soy Sauce
  • 2 cloves Garlic
  • 1 inch Ginger
  • 2 tablespoons Olive Oil

Instructions:

  1. 1. Cut all the fruits and vegetables into small pieces.
  2. 2. Mince the garlic and ginger.
  3. 3. Heat a pan over medium heat, add the olive oil.
  4. 4. Add the minced garlic and ginger to the pan and stir for a minute.
  5. 5. Add the tofu, stir and cook until it is golden brown.
  6. 6. Add the pineapple, peppers, onion, and mango to the pan and stir-fry for 5-10 minutes until the vegetables are tender and the fruits are heated through. Add a little water if needed.
  7. 7. Drizzle the soy sauce over the stir-fry, mix well and cook for another 2 minutes.
  8. 8. Remove from heat and serve hot.
