Chinese Fried Rice

Ingredients:

  • 3 cups Cooked white rice
  • 1 Cup Chicken breast
  • 1 cup Carrots
  • 1/2 cup Peas
  • 3 Eggs
  • 3 Tablespoon Soy sauce
  • 2 Garlic cloves
  • 1/2 cup Green onions
  • 2 Tablespoon Vegetable oil
  • 1 Tablespoon Sesame oil

Instructions:

  1. Heat 1 tablespoon of vegetable oil in a large frying pan over medium heat. Add the eggs and scramble until fully cooked. Remove them from the pan and set aside.
  2. Wipe out the pan, increase the heat to high and heat 1 tablespoon vegetable oil. Add the chicken and cook until browned and cooked through. Remove from the pan and set aside.
  3. Lower the heat to medium, add 1 tablespoon oil. Add the garlic and onion to the pan, stirring often until the onion has softened. Add the carrots and peas, stir to combine and cook until the vegetables are tender.
  4. Increase the heat to high, add the remaining 1 tablespoon oil. Add rice into the pan and cook, stirring often for 3-4 minutes.
  5. Add the cooked chicken and scramble eggs back to the pan, stir to fully incorporate.
  6. Stir in soy sauce and sesame oil, cook until everything is well blended and heated through.
  7. Garnish with green onions and serve.
