
Chinese Egg Fried Rice Comfort Food

Ingredients:
- 4 unit Eggs
- 3 cups Cooked white rice
- 2 stalks Green onions
- 2 tablespoons Soy sauce
- 1 cup Peas and carrots mix
- 2 cloves Garlic cloves
- 1 tablespoon Sesame oil
- to taste Salt and pepper
Instructions:
- Beat the eggs and set aside.
- Chop the green onions.
- Mince the garlic cloves.
- Heat up a wok or a non-stick pan over medium heat.
- Add sesame oil and minced garlic, stir-fry until aromatic.
- Add the beaten eggs, scramble them until they're fully cooked. Remove them from the wok/pan.
- Add a little more oil, then add the cooked rice. Stir-fry for a couple of minutes.
- Add peas and carrots mix, continue to stir-fry for a few minutes.
- Add soy sauce, continue stirring.
- Add scrambled eggs back into the wok/pan. Stir everything together.
- Season with salt and pepper as per your preference.
- Garnish with green onions before serving.
