Chinese Egg Fried Rice Comfort Food

Ingredients:

  • 4 unit Eggs
  • 3 cups Cooked white rice
  • 2 stalks Green onions
  • 2 tablespoons Soy sauce
  • 1 cup Peas and carrots mix
  • 2 cloves Garlic cloves
  • 1 tablespoon Sesame oil
  • to taste Salt and pepper

Instructions:

  1. Beat the eggs and set aside.
  2. Chop the green onions.
  3. Mince the garlic cloves.
  4. Heat up a wok or a non-stick pan over medium heat.
  5. Add sesame oil and minced garlic, stir-fry until aromatic.
  6. Add the beaten eggs, scramble them until they're fully cooked. Remove them from the wok/pan.
  7. Add a little more oil, then add the cooked rice. Stir-fry for a couple of minutes.
  8. Add peas and carrots mix, continue to stir-fry for a few minutes.
  9. Add soy sauce, continue stirring.
  10. Add scrambled eggs back into the wok/pan. Stir everything together.
  11. Season with salt and pepper as per your preference.
  12. Garnish with green onions before serving.
