Chinese Congee with Century Egg and Lean Meat

Ingredients:
- 1 cup Rice
- 8 cups Water
- 2 Century Eggs
- 200 g Lean pork loin
- 1 tsp Salt
- 2 stalks Scallions
- 1 tbsp Ginger
Instructions:
- Rinse the rice under cold water until the water becomes clear.
- Boil the water in a large pot, then add the rinsed rice and ginger.
- Lower the heat and simmer the rice, stirring occasionally, for 1 hour or until the rice breaks down and thickens into a porridge-like consistency.
- While the rice is cooking, slice the lean pork thinly and marinate with salt and pepper for 15 minutes.
- Cut the century eggs into small chunks.
- Stir the pork and century egg pieces into the congee and cook until the pork is fully cooked.
- Season the congee with salt to taste, and garnish with chopped scallions before serving.
