Chinese Congee with Century Egg and Lean Meat

Ingredients:

  • 1 cup Rice
  • 8 cups Water
  • 2 Century Eggs
  • 200 g Lean pork loin
  • 1 tsp Salt
  • 2 stalks Scallions
  • 1 tbsp Ginger

Instructions:

  1. Rinse the rice under cold water until the water becomes clear.
  2. Boil the water in a large pot, then add the rinsed rice and ginger.
  3. Lower the heat and simmer the rice, stirring occasionally, for 1 hour or until the rice breaks down and thickens into a porridge-like consistency.
  4. While the rice is cooking, slice the lean pork thinly and marinate with salt and pepper for 15 minutes.
  5. Cut the century eggs into small chunks.
  6. Stir the pork and century egg pieces into the congee and cook until the pork is fully cooked.
  7. Season the congee with salt to taste, and garnish with chopped scallions before serving.
