Chinese Comfort Rice Bowl

Ingredients:

  • 2 cups Jasmine rice
  • 2 pieces Chicken breasts
  • 1/4 cup Soy sauce
  • 1/4 cup Hoisin sauce
  • 1 tablespoon Cornflour
  • 2 tablespoons Vegetable oil
  • 2 cloves Garlic
  • 4 pieces Spring onions
  • 1 piece Red bell pepper
  • 2 pieces Carrot
  • 2 cups Broccoli florets
  • 1/2 cup Snow peas
  • 4 cups Water
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions:

  1. In a medium saucepan, bring 4 cups of water to a boil. Add jasmine rice, reduce heat, cover and cook for 15 minutes.
  2. Cut chicken breasts into thin strips. In a bowl, mix soy sauce, hoisin sauce, and cornflour. Add chicken to the bowl and marinate for 15 minutes.
  3. In a large frying pan or wok, heat up the vegetable oil. Add crushed garlic and half of the chopped spring onions. Stir for 1-2 minutes until fragrant.
  4. Add chicken to the frying pan and stir-fry until cooked. Remove chicken from pan and set aside.
  5. In the same pan, add chopped red bell pepper, carrot, broccoli and peas. Stir-fry until veggies are tender.
  6. Mix cooked rice, chicken, and vegetables together in the pan. Season with salt and pepper as desired.
  7. Serve hot, garnished with the remaining spring onions.
