
Chinese Comfort Rice Bowl

Ingredients:
- 2 cups Jasmine rice
- 2 pieces Chicken breasts
- 1/4 cup Soy sauce
- 1/4 cup Hoisin sauce
- 1 tablespoon Cornflour
- 2 tablespoons Vegetable oil
- 2 cloves Garlic
- 4 pieces Spring onions
- 1 piece Red bell pepper
- 2 pieces Carrot
- 2 cups Broccoli florets
- 1/2 cup Snow peas
- 4 cups Water
- 1 teaspoon Salt
- 1 teaspoon Pepper
Instructions:
- In a medium saucepan, bring 4 cups of water to a boil. Add jasmine rice, reduce heat, cover and cook for 15 minutes.
- Cut chicken breasts into thin strips. In a bowl, mix soy sauce, hoisin sauce, and cornflour. Add chicken to the bowl and marinate for 15 minutes.
- In a large frying pan or wok, heat up the vegetable oil. Add crushed garlic and half of the chopped spring onions. Stir for 1-2 minutes until fragrant.
- Add chicken to the frying pan and stir-fry until cooked. Remove chicken from pan and set aside.
- In the same pan, add chopped red bell pepper, carrot, broccoli and peas. Stir-fry until veggies are tender.
- Mix cooked rice, chicken, and vegetables together in the pan. Season with salt and pepper as desired.
- Serve hot, garnished with the remaining spring onions.
