
Chinese Comfort Food: Sweet and Sour Pork

Ingredients:
- 1 pound Pork shoulder
- 2 teaspoons Salt
- 1/2 teaspoon Pepper
- 3/4 cup Cornstarch
- 2 cups Vegetable oil
- 1/2 cup Apple cider vinegar
- 1/4 cup Ketchup
- 1 tablespoon Soy sauce
- 1/2 cup Sugar
- 1 piece Bell pepper, cut into chunks
- 1 can Pineapple chunks
- 1 piece Onion, cut into chunks
Instructions:
- Cut the pork into 1-inch pieces and season with salt and pepper.
- Coat the pork pieces with cornstarch.
- Heat the vegetable oil in a deep fryer or large, deep saute pan to 375°F (190°C).
- Fry the pork pieces in the hot oil until golden brown. Remove and drain on paper towels.
- In a large pan, mix together the vinegar, ketchup, soy sauce, and sugar. Bring to a simmer.
- Add the bell pepper, pineapple, and onion to the pan. Simmer for about 10 minutes, until the vegetables are tender.
- Add the fried pork into the pan and stir everything together until the pork is coated in the sauce.
- Serve the sweet and sour pork hot. Enjoy your Chinese comfort food!
