Chinese Comfort Food Egg Stir Fry

Ingredients:

  • 6 whole Eggs
  • 1 whole Green bell pepper
  • 1 whole Red bell pepper
  • 1 whole Yellow onion
  • 3 whole Garlic cloves
  • 2 tablespoons Soy sauce
  • 2 tablespoons Sesame oil
  • 2 cups White rice
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Beat the eggs in a bowl and add salt and pepper.
  2. Heat 1 tablespoon of sesame oil in a large pan over medium heat. Add the beaten eggs and scramble until cooked. Remove the eggs and set aside.
  3. In the same pan, add the remaining sesame oil, then add the bell peppers and onion. Saute until they start to soften, about 5 minutes.
  4. Add the garlic and cook for another minute.
  5. Add cooked eggs back into the pan, then add the soy sauce. Stir together until fully combined.
  6. Serve the stir fry over the cooked white rice. Enjoy your hearty, comforting meal!
