
Chinese Comfort Food Egg Stir Fry

Ingredients:
- 6 whole Eggs
- 1 whole Green bell pepper
- 1 whole Red bell pepper
- 1 whole Yellow onion
- 3 whole Garlic cloves
- 2 tablespoons Soy sauce
- 2 tablespoons Sesame oil
- 2 cups White rice
- to taste Salt
- to taste Black pepper
Instructions:
- Beat the eggs in a bowl and add salt and pepper.
- Heat 1 tablespoon of sesame oil in a large pan over medium heat. Add the beaten eggs and scramble until cooked. Remove the eggs and set aside.
- In the same pan, add the remaining sesame oil, then add the bell peppers and onion. Saute until they start to soften, about 5 minutes.
- Add the garlic and cook for another minute.
- Add cooked eggs back into the pan, then add the soy sauce. Stir together until fully combined.
- Serve the stir fry over the cooked white rice. Enjoy your hearty, comforting meal!
