Chinese Comfort Food Egg Fried Rice

Ingredients:

  • 4 full Eggs
  • 3 cups Cooked jasmine rice
  • 2 tablespoons Vegetable oil
  • 3 tablespoons Soy sauce
  • 3 full Green onions
  • 2 full Garlic cloves
  • 1 teaspoon Sesame oil
  • 1 cup Peas
  • 1 cup Carrots
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Beat the eggs in a bowl and set aside.
  2. Heat half the oil in a wok. Add the garlic and sauté until fragrant.
  3. Add the beaten eggs and scramble until lightly set.
  4. Remove the scrambled eggs, clean the wok, and heat the remaining oil.
  5. Add the carrots and peas, stir frying until tender.
  6. Add the rice, stir until well mixed with the vegetables.
  7. Stir in the soy sauce and sesame oil.
  8. Add the scrambled eggs back into the wok and stir racing until well combined.
  9. Add the green onions, salt, and pepper. Stir fry for another minute.
  10. Serve warm and enjoy your comfort meal!
