Chinese Comfort Food: Chicken Congee

Ingredients:

  • 1 cup rice
  • 8 cups water
  • 1 pound chicken breast, boneless and skinless
  • 1 tablespoon ginger, chopped
  • 2 cloves garlic cloves, minced
  • 2 stalks spring onions, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper powder

Instructions:

  1. 1. Rinse the rice under cold water until the water runs clear. Set aside.
  2. 2. In a large pot, add the rinsed rice and water. Bring to a simmer over medium-high heat.
  3. 3. Add the chicken breast to the pot. Cook until the chicken is fully cooked, about 20-30 minutes. Remove the chicken and shred it. Set aside.
  4. 4. Add ginger and garlic to the pot, stirring frequently. Continue to simmer the rice for another 30 minutes, until it is a thick, soupy consistency.
  5. 5. Add the shredded chicken, chopped spring onions, salt, and white pepper powder. Stir until well mixed.
  6. 6. Cook for another 10 minutes, then remove from heat.
  7. 7. Serve the congee warm, garnished with additional spring onions if desired.
