Chinese Comfort Food: Chicken Congee

Ingredients:
- 1 cup rice
- 8 cups water
- 1 pound chicken breast, boneless and skinless
- 1 tablespoon ginger, chopped
- 2 cloves garlic cloves, minced
- 2 stalks spring onions, chopped
- 1 teaspoon salt
- 1/2 teaspoon white pepper powder
Instructions:
- 1. Rinse the rice under cold water until the water runs clear. Set aside.
- 2. In a large pot, add the rinsed rice and water. Bring to a simmer over medium-high heat.
- 3. Add the chicken breast to the pot. Cook until the chicken is fully cooked, about 20-30 minutes. Remove the chicken and shred it. Set aside.
- 4. Add ginger and garlic to the pot, stirring frequently. Continue to simmer the rice for another 30 minutes, until it is a thick, soupy consistency.
- 5. Add the shredded chicken, chopped spring onions, salt, and white pepper powder. Stir until well mixed.
- 6. Cook for another 10 minutes, then remove from heat.
- 7. Serve the congee warm, garnished with additional spring onions if desired.
