Chinese Chicken Congee

Ingredients:
- 2 pieces Chicken breast
- 1 cup Rice
- 6 cups Water
- 1 inch piece Ginger
- 2 stalks Spring onions
- to taste Salt
- to taste Pepper
Instructions:
- Rinse the chicken breast and pat dry. Trim off any fat.
- Clean the rice under running water until the water runs clear.
- In a large pot, combine the rice, chicken breast, water, and ginger. Bring to a boil over high heat.
- Reduce the heat to low, cover, and simmer for about 1 hour, or until the rice is fully broken down and the chicken is tender.
- Remove the chicken from the pot and shred it. Return it back to the pot.
- Chop the spring onions and set aside for garnish.
- Season the congee with salt and pepper. Continue to simmer for another 5 minutes.
- Serve hot, garnished with chopped spring onions.
