Chinese Chicken Congee

Ingredients:

  • 2 pieces Chicken breast
  • 1 cup Rice
  • 6 cups Water
  • 1 inch piece Ginger
  • 2 stalks Spring onions
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Rinse the chicken breast and pat dry. Trim off any fat.
  2. Clean the rice under running water until the water runs clear.
  3. In a large pot, combine the rice, chicken breast, water, and ginger. Bring to a boil over high heat.
  4. Reduce the heat to low, cover, and simmer for about 1 hour, or until the rice is fully broken down and the chicken is tender.
  5. Remove the chicken from the pot and shred it. Return it back to the pot.
  6. Chop the spring onions and set aside for garnish.
  7. Season the congee with salt and pepper. Continue to simmer for another 5 minutes.
  8. Serve hot, garnished with chopped spring onions.
