
Chinese Breakfast Noodles

Ingredients:
- 450 g Fresh thin Chinese egg noodles or pasta
- 2 tbsp Vegetable oil
- 100 g Chinese sausage or ham, finely chopped
- 2 cloves Garlic, finely chopped
- 2 units Green onions, sliced
- 4 units Eggs
- 2 tbsp Soy sauce
- 1 tbsp Oyster sauce
- 1 tsp Sesame oil
- 0.5 tsp White pepper
Instructions:
- Boil the noodles according to the package instructions until al dente then drain and set aside.
- In a large pan or wok, heat up the vegetable oil and sauté the Chinese sausage or ham until it starts to brown.
- Add the chopped garlic and the whites of the green onions and sauté until fragrant.
- Beat the eggs in a bowl and pour them into the pan spreading them out to make a thin omelette. Once set, break the eggs apart with the spatula.
- Add the cooked noodles, soy sauce, oyster sauce, sesame oil and white pepper. Stir well to make sure the noodles are well coated.
- Serve the noodles hot with a sprinkle of the green parts of the green onions on top.
