Chinese Breakfast Noodles

Ingredients:

  • 450 g Fresh thin Chinese egg noodles or pasta
  • 2 tbsp Vegetable oil
  • 100 g Chinese sausage or ham, finely chopped
  • 2 cloves Garlic, finely chopped
  • 2 units Green onions, sliced
  • 4 units Eggs
  • 2 tbsp Soy sauce
  • 1 tbsp Oyster sauce
  • 1 tsp Sesame oil
  • 0.5 tsp White pepper

Instructions:

  1. Boil the noodles according to the package instructions until al dente then drain and set aside.
  2. In a large pan or wok, heat up the vegetable oil and sauté the Chinese sausage or ham until it starts to brown.
  3. Add the chopped garlic and the whites of the green onions and sauté until fragrant.
  4. Beat the eggs in a bowl and pour them into the pan spreading them out to make a thin omelette. Once set, break the eggs apart with the spatula.
  5. Add the cooked noodles, soy sauce, oyster sauce, sesame oil and white pepper. Stir well to make sure the noodles are well coated.
  6. Serve the noodles hot with a sprinkle of the green parts of the green onions on top.
