Chinese Breakfast Fish Congee

Ingredients:
- 2 pieces White fish fillets
- 1/2 cup Jasmine rice
- 8 cups Water
- 1 inch piece Ginger
- 3 stalks Green onions
- to taste Soy sauce
- to taste Pepper
- few springs Cilantro
Instructions:
- Rinse the jasmine rice under cold water until water runs clear.
- Add the rice, water, and grated ginger into a large pot. Bring to a boil.
- Once boiling, reduce the heat to low and simmer for about 1 hour until the rice has broken down and congee has thickened.
- While the congee is cooking, chop the green onions and cilantro, set aside. Prepare the fish fillets by cutting them into bite-sized pieces.
- Add the fish to the congee in the last 15 minutes of cooking, stirring periodically to ensure fish is cooked thoroughly.
- Once the congee has thickened to your desired consistency and fish is cooked, add the soy sauce, pepper to taste. Garnish with chopped green onions and cilantro before serving. Enjoy this warm and nourishing Chinese breakfast dish!
