Chinese Breakfast Beef Congee

Ingredients:

  • 1 lb Beef brisket
  • 1 cup Jasmine rice
  • 10 cups Water
  • 5 slices Ginger slice
  • 2 stalks Green onions
  • to taste Salt
  • 1 tsp Sesame oil

Instructions:

  1. Cut the beef into large, about 2-inch chunks and set aside.
  2. Rinse the Jasmine rice under cold water until the water is clear.
  3. Place beef, rice, water, and ginger slices into a large pot.
  4. Bring the pot to a boil over high heat and then reduce to a simmer.
  5. Simmer for about 1 hour 30 minutes until the rice breaks apart and the congee is creamy.
  6. While the congee is cooking, chop the green onions. These will be used for garnishing.
  7. Adjust the seasoning with salt, then add in the sesame oil for added flavor.
  8. Serve the hot congee in bowls, garnished with green onions.
