Chinese Breakfast Beef Congee

Ingredients:
- 1 lb Beef brisket
- 1 cup Jasmine rice
- 10 cups Water
- 5 slices Ginger slice
- 2 stalks Green onions
- to taste Salt
- 1 tsp Sesame oil
Instructions:
- Cut the beef into large, about 2-inch chunks and set aside.
- Rinse the Jasmine rice under cold water until the water is clear.
- Place beef, rice, water, and ginger slices into a large pot.
- Bring the pot to a boil over high heat and then reduce to a simmer.
- Simmer for about 1 hour 30 minutes until the rice breaks apart and the congee is creamy.
- While the congee is cooking, chop the green onions. These will be used for garnishing.
- Adjust the seasoning with salt, then add in the sesame oil for added flavor.
- Serve the hot congee in bowls, garnished with green onions.
