Chinese Beef Noodle Soup

Ingredients:
- 2 lbs Beef Shank
- 1 packet Chinese Wheat Noodles
- 4 pieces Star Anise
- 1 inch Ginger
- 2 stalks Green Onion
- 3 tablespoons Soy Sauce
- 2 tablespoons Chinese Cooking Wine
- 1 teaspoon White Pepper
- 8 cups Water
Instructions:
- Cut the beef into large chunks and blanch in a pot of boiling water for 5 minutes. Drain and set aside.
- In a large pot, heat some oil over medium heat. Add the ginger, green onions, and star anise and stir-fry until fragrant.
- Add the beef to the pot along with the soy sauce, cooking wine, and white pepper. Cook for a few minutes until the beef is evenly coated with the seasonings.
- Pour in the water and bring the soup to a boil. Lower the heat and let it simmer for 2 hours, until the beef is tender and the soup is flavorful.
- In the meantime, cook the noodles according to the instructions on the packet.
- When the beef is tender, take it out of the soup and slice it into thinner pieces. Served the cooked noodles in bowls, topped with sliced beef and ladle the hot soup over. Enjoy your comforting Chinese beef noodle soup warm.
