Chinese Beef Congee for Breakfast

Ingredients:
- 1/2 pound Beef Shanks
- 1 cup Jasmine Rice
- 6 cups Water
- 1 inch Ginger
- 2 stalks Green Onions
- 1 teaspoon Salt
- 1/4 teaspoon White Pepper
Instructions:
- Slice the beef into thin pieces and marinate it with a touch of salt and white pepper.
- Rinse the jasmine rice under cold water until the water runs clear.
- Combine the beef, rice, and water in a large pot. Bring the mixture to a boil over high heat, then reduce the heat to low, cover the pot, and let it simmer.
- Peel and slice the ginger into thin strips. Add them to the pot after it has been simmering for about 30 minutes.
- While the congee is cooking, chop the green onions.
- After the congee has been simmering for about an hour, it should have a creamy texture. If it’s too thick, you can add more water. Once it’s done, season it with the chopped green onions, salt, and white pepper to taste.
- Serve the congee hot. Enjoy your Chinese beef congee for breakfast!
