Chicken & Veggie Rice Stir Fry

Ingredients:

  • 2 whole Boneless Chicken Breast
  • 1 cup Bell Peppers
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 4 tablespoons Soy Sauce
  • 2 cups Brown Rice
  • 2 tablespoons Olive Oil
  • 1 cup Broccoli
  • 2 medium Carrots
  • 1 large Egg

Instructions:

  1. Cook the brown rice according to the instructions on the package and set aside.
  2. While the rice cooks, cut the chicken into bite-sized pieces and season with salt and pepper.
  3. Heat one tablespoon of olive oil in a large skillet or wok over medium-high heat. Once hot, add the chicken and cook until browned and completely cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining olive oil. Then add chopped onion, minced garlic, diced bell peppers, broccoli florets and sliced carrots. Cook for about 5-7 minutes, until the vegetables are tender.
  5. Push the veggie mixture to one side of the skillet. Add the egg to the other side and scramble it. Once cooked, mix the egg with the veggies.
  6. Add the cooked chicken and rice to the skillet. Drizzle soy sauce over the top and stir all ingredients together until evenly combined.
  7. Serve hot and enjoy this nutritious late-night dish.
