
Chicken & Veggie Rice Stir Fry

Ingredients:
- 2 whole Boneless Chicken Breast
- 1 cup Bell Peppers
- 1 medium Onion
- 2 cloves Garlic cloves
- 4 tablespoons Soy Sauce
- 2 cups Brown Rice
- 2 tablespoons Olive Oil
- 1 cup Broccoli
- 2 medium Carrots
- 1 large Egg
Instructions:
- Cook the brown rice according to the instructions on the package and set aside.
- While the rice cooks, cut the chicken into bite-sized pieces and season with salt and pepper.
- Heat one tablespoon of olive oil in a large skillet or wok over medium-high heat. Once hot, add the chicken and cook until browned and completely cooked through. Remove from the skillet and set aside.
- In the same skillet, add the remaining olive oil. Then add chopped onion, minced garlic, diced bell peppers, broccoli florets and sliced carrots. Cook for about 5-7 minutes, until the vegetables are tender.
- Push the veggie mixture to one side of the skillet. Add the egg to the other side and scramble it. Once cooked, mix the egg with the veggies.
- Add the cooked chicken and rice to the skillet. Drizzle soy sauce over the top and stir all ingredients together until evenly combined.
- Serve hot and enjoy this nutritious late-night dish.
