Chicken Teriyaki Donburi

Ingredients:

  • 500 grams Skinless chicken thighs
  • 1/4 cup Soy Sauce
  • 1/4 cup Mirin
  • 2 tablespoons Sugar
  • 2 cloves Garlic cloves, crushed
  • 1 tablespoon Ginger, grated
  • 4 cups Cooked white rice
  • 4 stalks Spring onions, chopped

Instructions:

  1. In a bowl, combine soy sauce, mirin, sugar, crushed garlic and grated ginger to make the teriyaki sauce.
  2. Place the chicken thighs in a ziplock bag, pour the teriyaki marinade over the chicken. Seal the bag and make sure the chicken is well coated. Marinate for at least 30 minutes.
  3. Heat a skillet over medium heat. Remove chicken from the marinade, reserving the marinade, and cook the chicken thighs for about 6-7 minutes on each side, or until cooked through and golden brown on the outside.
  4. Pour the reserved marinade into the skillet and simmer until it reduces to a thick glossy sauce.
  5. Slice the chicken and serve it on top of cooked white rice. Drizzle the reduced teriyaki sauce over the chicken and garnish with chopped spring onions. Serve hot.
