Servings: 4
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Ingredients:
- 500 grams Skinless chicken thighs
- 1/4 cup Soy Sauce
- 1/4 cup Mirin
- 2 tablespoons Sugar
- 2 cloves Garlic cloves, crushed
- 1 tablespoon Ginger, grated
- 4 cups Cooked white rice
- 4 stalks Spring onions, chopped
Instructions:
- In a bowl, combine soy sauce, mirin, sugar, crushed garlic and grated ginger to make the teriyaki sauce.
- Place the chicken thighs in a ziplock bag, pour the teriyaki marinade over the chicken. Seal the bag and make sure the chicken is well coated. Marinate for at least 30 minutes.
- Heat a skillet over medium heat. Remove chicken from the marinade, reserving the marinade, and cook the chicken thighs for about 6-7 minutes on each side, or until cooked through and golden brown on the outside.
- Pour the reserved marinade into the skillet and simmer until it reduces to a thick glossy sauce.
- Slice the chicken and serve it on top of cooked white rice. Drizzle the reduced teriyaki sauce over the chicken and garnish with chopped spring onions. Serve hot.
