Chicken Congee

Ingredients:
- 1 pound Chicken thighs, boneless and skinless
- 1 cup Jasmine rice
- 8 cups Water
- 1 tablespoon Ginger, peeled and minced
- 2 Garlic cloves, minced
- 2 Green onions, chopped
- 2 tablespoons Soy sauce
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
Instructions:
- Place the chicken thighs in a large pot.
- Wash the jasmine rice under cold water until the water runs clear. Add it to the pot.
- Add the water, minced ginger, and minced garlic to the pot.
- Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and cover the pot. Let it simmer for 1 hour.
- After an hour, remove the chicken thighs from the pot. Use two forks to shred the chicken into small pieces.
- Return the shredded chicken to the pot. Add the chopped green onions, soy sauce, salt, and pepper.
- Continue to simmer the congee for another 20 minutes, until the rice and chicken are completely cooked and the congee has thickened to your liking.
- Serve the chicken congee hot, garnished with additional green onions if desired.
