Chicken Congee

Ingredients:

  • 1 pound Chicken thighs, boneless and skinless
  • 1 cup Jasmine rice
  • 8 cups Water
  • 1 tablespoon Ginger, peeled and minced
  • 2 Garlic cloves, minced
  • 2 Green onions, chopped
  • 2 tablespoons Soy sauce
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions:

  1. Place the chicken thighs in a large pot.
  2. Wash the jasmine rice under cold water until the water runs clear. Add it to the pot.
  3. Add the water, minced ginger, and minced garlic to the pot.
  4. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and cover the pot. Let it simmer for 1 hour.
  5. After an hour, remove the chicken thighs from the pot. Use two forks to shred the chicken into small pieces.
  6. Return the shredded chicken to the pot. Add the chopped green onions, soy sauce, salt, and pepper.
  7. Continue to simmer the congee for another 20 minutes, until the rice and chicken are completely cooked and the congee has thickened to your liking.
  8. Serve the chicken congee hot, garnished with additional green onions if desired.
