
Chicken Cacciatore with Black Spaghetti

Ingredients:
- 4 Chicken thighs
- 200 grams Black Spaghetti
- 2 tablespoons Olive oil
- 1 medium-sized Onion
- 2 Garlic cloves
- 400 grams Tomatoes
- 1 large Red bell pepper
- 1/2 cup Dry white wine
- 1 cup Chicken broth
- 1 tablespoon Capers
- 1 bunch Parsley
- to taste Salt
- to taste Black pepper
Instructions:
- Heat the oil in a large skillet over medium heat. Add chicken and cook until browned on both sides.
- Remove chicken from skillet. In the same skillet, add the onion, bell pepper, and garlic. Cook for a few minutes until vegetables are soft.
- Add the tomatoes, chicken broth, white wine, and capers. Stir well.
- Return the chicken to the skillet, cover and simmer for about 30 minutes.
- In another pot, cook the black spaghetti according to the package instructions.
- Once the chicken is cooked through and the sauce has thickened, adjust the seasoning with salt and pepper as needed.
- Serve the chicken cacciatore over the cooked black spaghetti and sprinkle with chopped fresh parsley.
