Chicken Cacciatore with Black Spaghetti

Ingredients:

  • 4 Chicken thighs
  • 200 grams Black Spaghetti
  • 2 tablespoons Olive oil
  • 1 medium-sized Onion
  • 2 Garlic cloves
  • 400 grams Tomatoes
  • 1 large Red bell pepper
  • 1/2 cup Dry white wine
  • 1 cup Chicken broth
  • 1 tablespoon Capers
  • 1 bunch Parsley
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Heat the oil in a large skillet over medium heat. Add chicken and cook until browned on both sides.
  2. Remove chicken from skillet. In the same skillet, add the onion, bell pepper, and garlic. Cook for a few minutes until vegetables are soft.
  3. Add the tomatoes, chicken broth, white wine, and capers. Stir well.
  4. Return the chicken to the skillet, cover and simmer for about 30 minutes.
  5. In another pot, cook the black spaghetti according to the package instructions.
  6. Once the chicken is cooked through and the sauce has thickened, adjust the seasoning with salt and pepper as needed.
  7. Serve the chicken cacciatore over the cooked black spaghetti and sprinkle with chopped fresh parsley.
