Cheesy Veggie Quesadillas

Ingredients:

  • 8 whole Tortillas
  • 2 whole Bell peppers
  • 1 whole Onion
  • 2 cups shredded Cheese (cheddar or mozzarella)
  • 2 tablespoons N/A Olive oil
  • to taste N/A Salt and pepper

Instructions:

  1. 1. Slice up the bell peppers and onion into thin strips.
  2. 2. Heat up the olive oil in a pan over medium heat. Add the sliced vegetables to the pan, stir occasionally until they're softened and lightly browned.
  3. 3. Lay out four tortillas and distribute the cooked vegetables evenly across each one.
  4. 4. Evenly distribute the cheese over the top of the vegetables on each tortilla, then place the remaining tortillas on top to make four quesadillas.
  5. 5. Cook each quesadilla in a large nonstick pan over medium heat. Flip them when the bottom tortilla is crisped up and browned (about 4-6 minutes), then cook the other side until it’s similarly crisped.
  6. 6. Cut the quesadillas into quarters using a pizza cutter and serve immediately while they're still warm and the cheese is melted!
