
Cheesy Veggie Quesadillas

Ingredients:
- 8 whole Tortillas
- 2 whole Bell peppers
- 1 whole Onion
- 2 cups shredded Cheese (cheddar or mozzarella)
- 2 tablespoons N/A Olive oil
- to taste N/A Salt and pepper
Instructions:
- 1. Slice up the bell peppers and onion into thin strips.
- 2. Heat up the olive oil in a pan over medium heat. Add the sliced vegetables to the pan, stir occasionally until they're softened and lightly browned.
- 3. Lay out four tortillas and distribute the cooked vegetables evenly across each one.
- 4. Evenly distribute the cheese over the top of the vegetables on each tortilla, then place the remaining tortillas on top to make four quesadillas.
- 5. Cook each quesadilla in a large nonstick pan over medium heat. Flip them when the bottom tortilla is crisped up and browned (about 4-6 minutes), then cook the other side until it’s similarly crisped.
- 6. Cut the quesadillas into quarters using a pizza cutter and serve immediately while they're still warm and the cheese is melted!
