
Cheesy Veggie Quesadilla

Ingredients:
- 2 whole Bell peppers
- 4 whole Tortillas
- 2 cups Grated cheese
- 2 tablespoons Oil
- 1 teaspoon Cumin Powder
- to taste Salt
Instructions:
- 1. Cut the bell peppers into thin slices.
- 2. Heat oil in a pan over medium heat.
- 3. Saute the peppers until they are soft and caramelized. Season them with cumin and salt.
- 4. Remove the veggies from the pan and set aside.
- 5. Place one tortilla in the pan, sprinkle half the cheese, followed by the sauteed veggies and more cheese. Top it off with another tortilla. Cook until the cheese starts to melt.
- 6. Flip the quesadilla carefully and cook the other side until golden and crispy.
- 7. Cut the quesadilla into halves or quarters and serve hot.
