Total Time: 35 minutes
Ingredients:
- 2 cups Rice
- 1 cup Cheddar Cheese
- 1 cup Breadcrumbs
- 2 unit Eggs
- 0.5 cup Milk
- to taste Salt
- to taste Black Pepper
- for frying Vegetable Oil
Instructions:
- 1. Cook the rice as per package instructions and allow it to cool. You should have about four cups of cooked rice.
- 2. Beat the eggs in a bowl, and add the cooled rice, grated cheese, salt, and pepper. Mix until well combined.
- 3. Take one tablespoon of the mixture, roll into a ball, and then roll the ball in breadcrumbs.
- 4. Heat the oil in a deep fryer or large frying pan over medium-high heat. Test the oil by dropping a breadcrumb into it. If it sizzles, it is ready for frying.
- 5. Fry the rice balls in batches, being careful not to crowd the pan. Fry until golden brown, about 2 to 3 minutes each side. Remove with a slotted spoon and drain on paper towels.
- 6. Serve the cheesy rice balls hot with a side of marinara sauce or your favorite dipping sauce.
