
Brown Rice Poha

Ingredients:
- 1.5 cups Brown Rice Flakes (Poha)
- 1 tablespoon Canola Oil
- 1 teaspoon Mustard Seeds
- 1 teaspoon Cumin Seeds
- 8-10 Curry Leaves
- 0.5 cup Green Peas
- 1 Carrot, grated
- 1 Onion, chopped
- 0.5 teaspoon Turmeric Powder
- to taste Salt
- 1 tablespoon Lemon Juice
- 2 tablespoons Fresh Coriander (Cilantro), chopped
Instructions:
- 1. Soak the brown rice flakes in water for about 5 minutes, then drain and keep aside.
- 2. In a non-stick pan, heat the oil over medium flame. When hot, add the mustard seeds and cumin seeds.
- 3. Once the seeds start to sizzle, add the curry leaves, green peas, grated carrot, and chopped onions. Sauté for around 3-4 minutes until the onions turn light brown.
- 4. Add the turmeric powder and stir. Immediately after, add the soaked and drained brown rice flakes and mix gently until well combined.
- 5. Add salt as per taste and mix well again. Cook for another 2-3 minutes.
- 6. Turn off the flame, then add the lemon juice and mix gently.
- 7. Garnish with fresh chopped coriander before serving, and enjoy hot.
