Brown Rice Poha

Ingredients:

  • 1.5 cups Brown Rice Flakes (Poha)
  • 1 tablespoon Canola Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds
  • 8-10 Curry Leaves
  • 0.5 cup Green Peas
  • 1 Carrot, grated
  • 1 Onion, chopped
  • 0.5 teaspoon Turmeric Powder
  • to taste Salt
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Fresh Coriander (Cilantro), chopped

Instructions:

  1. 1. Soak the brown rice flakes in water for about 5 minutes, then drain and keep aside.
  2. 2. In a non-stick pan, heat the oil over medium flame. When hot, add the mustard seeds and cumin seeds.
  3. 3. Once the seeds start to sizzle, add the curry leaves, green peas, grated carrot, and chopped onions. Sauté for around 3-4 minutes until the onions turn light brown.
  4. 4. Add the turmeric powder and stir. Immediately after, add the soaked and drained brown rice flakes and mix gently until well combined.
  5. 5. Add salt as per taste and mix well again. Cook for another 2-3 minutes.
  6. 6. Turn off the flame, then add the lemon juice and mix gently.
  7. 7. Garnish with fresh chopped coriander before serving, and enjoy hot.
