Breakfast Shakshuka

Ingredients:

  • 2 tbs Extra virgin olive oil
  • 1 Red bell pepper
  • 1 Yellow onion
  • 3 cloves Garlic
  • 5 Tomatoes
  • 6 Eggs
  • 1 tsp Paprika
  • 1/2 tsp Cumin
  • 1/4 tsp Cayenne pepper
  • To taste Salt
  • To taste Black pepper
  • For garnish Fresh parsley
  • For garnish Feta cheese

Instructions:

  1. Heat oil in a large pan over medium heat
  2. Dice the bell pepper and onion and add to the pan, cook until softened
  3. Add the minced garlic and sauté until fragrant
  4. Add the diced tomatoes, spices, salt, and pepper, then stir and let simmer
  5. Make small wells in the tomato mixture and carefully crack an egg into each
  6. Cover the pan and let cook until the eggs are done to your liking
  7. Sprinkle with fresh parsley and feta cheese before serving
