
Breakfast Shakshuka

Ingredients:
- 2 tbs Extra virgin olive oil
- 1 Red bell pepper
- 1 Yellow onion
- 3 cloves Garlic
- 5 Tomatoes
- 6 Eggs
- 1 tsp Paprika
- 1/2 tsp Cumin
- 1/4 tsp Cayenne pepper
- To taste Salt
- To taste Black pepper
- For garnish Fresh parsley
- For garnish Feta cheese
Instructions:
- Heat oil in a large pan over medium heat
- Dice the bell pepper and onion and add to the pan, cook until softened
- Add the minced garlic and sauté until fragrant
- Add the diced tomatoes, spices, salt, and pepper, then stir and let simmer
- Make small wells in the tomato mixture and carefully crack an egg into each
- Cover the pan and let cook until the eggs are done to your liking
- Sprinkle with fresh parsley and feta cheese before serving
