Breakfast Pasta Scramble

Ingredients:

  • 8 ounces whole wheat spaghetti pasta
  • 1 tablespoon olive oil
  • 1 whole red bell pepper
  • 2 whole green onion
  • 2 cloves garlic
  • 4 whole eggs
  • to taste Parmesan cheese
  • to taste salt and pepper

Instructions:

  1. Boil the pasta according to package instructions until al dente, then drain and set aside.
  2. While the pasta is cooking, chop the red bell pepper, green onion, and garlic.
  3. Heat the olive oil in a large skillet over medium heat. Add the chopped vegetables and sauté until softened.
  4. In a separate bowl, beat the eggs and season with salt and pepper.
  5. Add the cooked pasta to the skillet with the vegetables, then pour in the beaten eggs. Stir well to combine, making sure the eggs evenly coat the pasta and vegetables.
  6. Cook until the eggs are set, then sprinkle with Parmesan cheese.
  7. Remove from heat, let cool for a few minutes, then serve.
