
Breakfast Pasta Scramble

Ingredients:
- 8 ounces whole wheat spaghetti pasta
- 1 tablespoon olive oil
- 1 whole red bell pepper
- 2 whole green onion
- 2 cloves garlic
- 4 whole eggs
- to taste Parmesan cheese
- to taste salt and pepper
Instructions:
- Boil the pasta according to package instructions until al dente, then drain and set aside.
- While the pasta is cooking, chop the red bell pepper, green onion, and garlic.
- Heat the olive oil in a large skillet over medium heat. Add the chopped vegetables and sauté until softened.
- In a separate bowl, beat the eggs and season with salt and pepper.
- Add the cooked pasta to the skillet with the vegetables, then pour in the beaten eggs. Stir well to combine, making sure the eggs evenly coat the pasta and vegetables.
- Cook until the eggs are set, then sprinkle with Parmesan cheese.
- Remove from heat, let cool for a few minutes, then serve.
