Breakfast Pasta Carbonara

Ingredients:

  • 1 lb spaghetti
  • 2 tbsp olive oil
  • 4 slices bacon or pancetta
  • 2 cloves garlic
  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions:

  1. Bring a large pot of lightly salted water to a boil. Add spaghetti and cook until tender yet firm to the bite, 8 to 10 minutes.
  2. While the pasta is cooking, heat oil in a large skillet over medium heat. Add the bacon or pancetta and cook until slightly crispy. Add the garlic and sauté for another minute, then remove from heat.
  3. In a separate bowl, whisk together the eggs, Parmesan cheese, salt, and pepper.
  4. Drain the pasta, reserving a small amount of the cooking water. Immediately add the hot pasta to the skillet with the bacon. Pour the egg mixture over the pasta and quickly toss to combine and cook the eggs, adding reserved pasta water as needed to thin the sauce.
  5. Serve the pasta immediately, topped with additional grated Parmesan if desired.
