Breakfast Pasta à la Française

Ingredients:

  • 200 grams Spaghetti
  • 4 slices Bacon
  • 50 grams Parmesan cheese
  • 1 bunch Fresh basil
  • 2 cloves Garlic
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Black pepper
  • 4 whole Eggs

Instructions:

  1. Bring a large pot of salted water to boil, add spaghetti and cook according to package instructions until al dente.
  2. While the spaghetti is cooking, cut the bacon into small bits and fry them in a pan with olive oil until crispy.
  3. Peel and mince the garlic. Once the bacon is crispy, add the minced garlic to the pan and stir until fragrant.
  4. Drain the cooked spaghetti, reserving some pasta water. Add the drained spaghetti to the pan with bacon and garlic. Toss well to combine.
  5. Crack the eggs into the pan and stir quickly to prevent them from scrambling. The heat of the pasta will cook the eggs slightly, creating a creamy sauce. If the pasta becomes too thick, use the reserved pasta water to thin it out a bit.
  6. Add the parmesan cheese and stir until melted and well integrated.
  7. Season with salt and black pepper. Garnish with fresh basil before serving.
  8. Serve the pasta hot with extra parmesan cheese at the table. Bon appétit!
