Breakfast Mac 'n Cheese

Ingredients:

  • 2 cups Elbow Macaroni
  • 2 cups Cheddar Cheese
  • 1 cup Milk
  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • 4 whole Eggs
  • 4 slices Bacon
  • to taste Salt and Pepper

Instructions:

  1. Boil the macaroni according to packet instructions until al dente, then strain and set aside.
  2. In a pan, cook the bacon slices until crispy. Set aside.
  3. In a pot, melt the butter. Add the flour and stir continuously to make a roux.
  4. Gradually add the milk to the pot, whisking continuously to avoid lumps. Add cheese, stir until the cheese is fully melted and the sauce is smooth.
  5. Crack the eggs into the pot and whisk until they're fully incorporated into the sauce.
  6. Add the cooked macaroni to the pot and stir until it's fully coated in the sauce. Season with salt and pepper.
  7. Crumble the crispy bacon and sprinkle it on top of the mac 'n cheese.
  8. Serve the breakfast mac 'n cheese hot, enjoy!
