
Beef Sukiyaki with Exotic Vegetables

Ingredients:
- 500 grams prime sirloin beef
- 200 grams mushrooms (Shiitake, Maitake, Shimeji)
- 1 medium lotus root
- 200 grams exotic vegetables (Bamboo shoots, taro, snow peas)
- 1/4 cup soy sauce
- 1/4 cup mirin
- 2 tablespoons sugar
- 2 cups dashi soup stock
- 4 cups cooked white rice
Instructions:
- Slice the beef thinly across the grain.
- Clean and slice the mushrooms and other vegetables.
- Peel and slice the lotus root into thin rounds.
- In a pot, combine the soy sauce, mirin, sugar, and dashi soup stock. Bring to a boil.
- Add the beef slices to the pot and cook until they change color.
- Add the mushrooms and other vegetables to the pot. Cook for another 5 minutes or so until they become tender.
- Lastly, add the sliced lotus root, and simmer for another 3-5 minutes.
- Serve the sukiyaki hot with some freshly cooked white rice on the side.
