Beef Sukiyaki with Exotic Vegetables

Ingredients:

  • 500 grams prime sirloin beef
  • 200 grams mushrooms (Shiitake, Maitake, Shimeji)
  • 1 medium lotus root
  • 200 grams exotic vegetables (Bamboo shoots, taro, snow peas)
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 2 tablespoons sugar
  • 2 cups dashi soup stock
  • 4 cups cooked white rice

Instructions:

  1. Slice the beef thinly across the grain.
  2. Clean and slice the mushrooms and other vegetables.
  3. Peel and slice the lotus root into thin rounds.
  4. In a pot, combine the soy sauce, mirin, sugar, and dashi soup stock. Bring to a boil.
  5. Add the beef slices to the pot and cook until they change color.
  6. Add the mushrooms and other vegetables to the pot. Cook for another 5 minutes or so until they become tender.
  7. Lastly, add the sliced lotus root, and simmer for another 3-5 minutes.
  8. Serve the sukiyaki hot with some freshly cooked white rice on the side.
